Does the tool to divide PST files of Outlook, create Unicode PST as a result?

No, the software is built with advanced algorithms. Hence, it creates resultant PST of the same inherited formatting as that of the source PST, i.e., if the source PST file is ANSI formatted, then the resultant PST will be created with the same formatting too.

What if the folder size is larger than the size mentioned while splitting?

If the folder size is larger than the size mentioned for splitting by folder, which is usually the case with sent items, inbox, and personal folders. Then, the software will further create multiple PST files of the particular folder as well, and name it accordingly for easily distinguishing each.

How will I recognize other PST files created for a particular folder?

Not only while using split PST by folder option, but also while splitting by other options too; the software has a default pattern set for naming the output PST file.

Thus, when the divide by folder option is selected and the software creates multiple PST files for a single folder it names them as; SysTools_SplitPST_Sent Items, SysTools_SplitPST_Sent Items_1, SysTools_SplitPST_Sent Items_2, and so on.
